You would spend the majority of your day chewing your veggies to absorb the same amount of nutrients you receive by juicing. By removing the fiber from these greens, you are able to flood the body with huge amounts of the energy, essential raw vitamins, nutrients and trace minerals that are found in fresh vegetables.
Fresh green juice delivers all the essential nutrients and living enzymes the body needs, while allowing the body a 'break' from digestion. Our body is at the height of its natural daily detoxification cycle during sleep (you can see the evidence of this simply in the fact that we get ‘morning breath’, which is literally your body excreting toxins through the tongue), and your body desperately needs this time to focus on elimination of waste matter (both new and old). This process is halted in the morning only by breaking your nightly ‘fast’. Once the body starts to digest your first meal it breaks the cycle. The best breakfast you can have is a green juice, as it allows the body to continue the detoxification process.
Green juices also have amazing colon-cleansing properties. As our lives get busier, we find ourselves moving faster. We are not taking the time to chew the way we were intended to, which would allow our bodies to maximize the benefits of our food. This makes room for blenders to have their place in our lives. The blender can, in a sense, ‘chew’ our food for us. However, since the fiber content is retained, blended foods are always going to require some digestion in the body, and cannot give the body the easily absorbable amount of nutrients that a green juice can. Like the blender, centrifugal juicers operate by grating food against a metal disk which spins at a very high speed. Study shows that high speed centrifugal action kills beneficial enzymes and nutrients. These juicers are not an efficient way of extracting the essentials out of the greens.
Green juice can taste good! Mixing greens such as mint leaves or other herbs can make the juice quite delicious. An ideal green juice contains:~ no more than 25% dark greens such as spinach, kale, silverbeet, broccoli, bok choy, dandelion greens~ 25-50% light greens such as celery or cucumber~ 25-50% other green sprouts such as sunflower greens, sweet pea greens. Other great ingredients to add include lemon, lime, ginger, fresh herbs such as parsley, mint leaves or cilantro (coriander). Mixing fruits with greens is not the best choice. Keep fruits seperate from greens. A green apple is a fruit, not a green. If you are sensitive to fruits, stevia is also a great way to take the edge off a really ‘green’-tasting juice, and add sweetness.
Hippocrates green drink: 50% cucumber, 10% celery, 25% sunflower greens and 15% pea greens.
Why FRESH Wheatgrass Juice?
Body Cleanser: Wheatgrass juice is a powerful cleanser and may start an immediate reaction with toxins and mucus in the stomach and thus may cause nausea. Chlorophyll will bring toxins stored away in the cells or in the fatty tissue into the bloodstream. Drink two ounces on an empty stomach.
Body Builder: Wheatgrass juice is very high in enzymes and chlorophyll. It contains up to 70% chlorophyll, which is an important blood builder. The chlorophyll molecule closely resembles that of the hemin molecule, the pigment which combines with protein to form hemoglobin. The major difference is the chlorophyll molecule contains magnesium as it’s central atom and the hemin molecule contains iron. The molecular structure of these two substances is almost identical in all other respects.
Energizer and Appetite Suppressant: The starch of the wheat seed is stored energy which, when converted to simpler sugar, is a quick energy source. It is especially good for athletes because it is a juice and is assimilated in 20 minutes. Wheat picks up 92 of the 102 minerals in the soil and contains all vitamins science has isolated. Because 1 ounce of juice equals up to 2 pounds of produce nutritionally, it naturally shuts off the appetite in the brain.
Antibiotic: Science has proven that chlorophyll will arrest growth and development of unfriendly bacteria. It acts to produce an unfavorable environment for bacterial growth, rather than by any direct action upon the bacteria themselves. Rapp and Gurney at Loyola University established that water-soluble chlorophyll inhibits the action of proteolytic bacteria (which break down protein into simpler substances) and enzymes. Thus, when taken internally (via mouth or rectum), it inhibits the putrefaction of protein by some of the bacteria that are commonly found in the digestive tract of meat eaters.
Carcinogens: Dr. Chiu-nan Lai, Ph. D., at the University of Texas System Cancer Center, Dept. of Biology, Houston, Texas, has determined through using the Ames Bacterial Mutagenicity Test that chlorophyll is the active factor in wheat sprout extract, which inhibits the metabolic activity of carcinogens. A 20-year study of 2,000 telephone company workers has found that a natural ingredient in carrots and leafy green vegetables significantly reduced the risk of lung cancer in cigarette smokers. They determined that a diet high in beta-carotene negated the bad effects of 30 years of smoking. The National Cancer Institute reports that 19 or 21 studies over the years have indicated diets high in beta-carotene contribute to at least 40% risk reduction in developing some kinds of cancer.
Anemia: Chlorophyll (wheatgrass) aids in rebuilding the bloodstream. Studies on various animals have shown chlorophyll to be free of any toxic reaction. The red blood cell count has returned to normal within 4 to 5 days of the administration of chlorophyll, even in those animals which were known to be extremely anemic or have a low red blood cell count.
Deodorizer: Dr. F. Howard Westcott reported that when chlorophyll is taken internally in adequate quantity, it reduces or eliminates offensive body and breath odors. His studies showed it to be effective in neutralizing obnoxious odors in the mouth from food, beverages, tobacco, and metabolic changes (halitosis). It effectively neutralized foul odors from perspiration due to physical exercise, nervousness, menstrual odors, etc.
Skin Disorders: The bland soothing effect of chlorophyll (wheatgrass) ointments are very beneficial to the treatment of various skin diseases involving the outer and underlying layers of the skin. This includes: itching and burning of the rectum, ivy poisoning, weeping and dry eczema, and conditions caused by insect bites or infection. For first and second degree burns, the use of chlorophyll has been established as an outstanding aid. Sunburn can also be alleviated by the use of chlorophyll ointment at the time of exposure. This can reduce discomfort and hinder infection. Applied after a severe sunburn, it has the same gratifying results as on regular burns. The same can be said of x-ray burns. Chlorophyll can also reduce or eliminate foul odors associated with burns.
Radiation: The United States Army exposed guinea pigs to lethal doses of radiation. The guinea pigs fed chlorophyll-rich vegetables such as cabbage and broccoli had half the mortality rate as those fed a non-chlorophyll rich diet.
Toxic Chemicals: Dr. Earp Thomas found that an ounce of wheatgrass in a gallon of fluoridated water would turn the fluorine into a harmless calcium-phosphate-fluoride compound. Used in wash water, wheatgrass adds softness to the face and hands. In the bath, it is most soothing. It stops bleeding, eases itching, and aids in the healing of pimples and sores. Dr. Earp Thomas further discovered that fruits and vegetables contaminated by sprays were thoroughly cleaned and the negative food was transformed by wash water with a wisp of wheatgrass placed in the water.

First of all, allow myself…to ...introduce....myself. My name is Michael Bergonzi, Professional Consultant of Wellness Programs, Wheatgrass, micro-greens & Sprouting business and a teacher of wheatgrass, health and LIFE. I also spent 10 years as the Greenhouse / Health Expo Manager / 2 time Health Educator Director / 3 time Program Consultant Director at Hippocrates Health Institute in West Palm Beach, FL. My career in the field of alternative health & wheatgrass began at the Optimum Health Institute in San Diego, CA back in 1990. Growing grass for a living and not ending up in jail seemed like a pretty cool job! Ok, I'll take it! Of course, the cost per one ounce is $1.00 rather than $350.00! (that was for all of our 'pot head' readers, relax, breathe, it was just a joke!!!) =)
Most people now a days have at least heard of wheatgrass juice if not actually tasted it themselves from a juice bar or health food store. (There are always some people that enjoy drinking it, but no one ever hangs around those people!) The taste of wheatgrass is not always a pleasant one and we are told that it must be our bodies that are detoxing. However, that is not always the case. You are just getting some BAD GRASS, MAN! =) There are many different ways that wheatgrass will not taste sweet. The most common is the age of the grass and being harvested too late. Another is lack of water on a daily basis, and the thrid reason could be too much sunlight. For example, as a wheatgrass grower, I would bring a tray of grass to the health food store, ready to juice. If they juiced it that day, it would not taste at all bitter or cause that nausea feeling. The grass would actually taste very sweet and go down smooth. But, they choose instead to put it in the store window for a display for people to see it, and now it stays in the window for two more days in which the sun shines on it, which it should never. They haven’t watered it, which they should everyday, and now, that same sweet tasting wheatgrass has aged almost 80 years in two days. It’s kind of like people, the older it gets, the more bitter it becomes! =) Wheatgrass should be harvested when a second blade becomes visible. It is always better to harvest the grass sooner rather than later, and then the entire tray needs to be cut at the same time. It may then be stored in the refrigerator for up to one / two weeks without losing it’s value and taste. Be sure your fridge is set on very cold. Approx. 38-42 degrees. Much of this next part is in my personal article in the Hippocrates Magazine entitled, "GREEN FOODS" volume 30 issue 3.
Now, let’s talk about the ‘greens’ on the planet Earth. First of all, everyone can agree that we, as humans, are mammals. Most of the mammals on this planet are living on leafy greens. In fact, we are one of the few mammals that still eat meat and the only mammal that cook our food. To say that protein only comes from eating meat is an uneducated statement. Sprouts, sprouted beans and GREENS are the best source of proteins for our bodies. Think about it on a bigger scale. How is it possible that most every mammal (and you all agreed that WE humans are mammals) can live on eating just leafy greens? Elk, moose, deer, giraffes, gorillas, elephants, horses, etc… and don’t forget the one that WE get most of our food here in the USA from, the COW!!! Ahhhhhhh… and here is the problem now a days. You see, in the past, when you lived on red meat and dairy products, in-directly you lived on GRASS. The cow was eating the grass; we were eating the cow. It just makes sense. We were getting the EARTH in our diets.
But, today, that is NOT the case. Most cows are now trough fed, mostly grains, which are making their systems too acid based, and are having to be shot full of antibiotics, steroids and of course hormones. They go over to the trough, eat as much as they can, and now want to take a nap because they are ‘full.’ (Ringing true to us as humans these days who drive through the fast food joint, meaning WE are being trough fed too! Staying full, getting tired and staying sick.) A cow taking a nap because it’s too full? Are you kidding me? So, the problem now is our red meat and dairy aren’t what they used to be. We are not getting the GRASS (green / earth) in our diet any longer. Look, I have been in this field now for 20 years, too long to judge anyone for what they choose to eat. I just want to educate people on “what’s simple is TRUE.” Get the Earth back in your diet, more oxygen back into your cells and exercise once a day. (yoga, walking, stretching, etc…)
OK. Is any of this making sense yet? Let’s go to the first thing your body needs to live. Before food, before water, you need OXYGEN!!! Everyone reading this, please pause for a moment and take a DEEP BREATH… Count to three on the inhale and three on the exhale. Wasn’t that good? Let’s face it, the only people that really focus on breath these days, unless you’re into yoga, thai-chi or meditation, are smokers! =( Personally, I smoked for 10 years, and I know why I felt the ‘need’ for a cigarette, because it would relax me. Exactly, what are you doing when you smoke? (You now have to leave your job and go outside the building. Amen to that law, so you get a bit of stress relief too.) You’re BREATHING DEEP, for the first time all day. I am NOT encouraging smoking, however, I am encouraging breathing. Try it without the “stick.” Walk away from people, your job, etc… and go somewhere, by yourself, and spend 5 minutes breathing deep. It’s amazing how much calmer you will be after doing this.
Now, let’s take a moment and go back to how ‘wheat’ grass came to light. A woman by the name of Ann Wigmore founded Hippocrates in Boston approx. 50 years ago. She actually healed her own health issues by chewing on ‘lawn’ grass. That’s right; I said lawn grass, not wheatgrass. She began chewing on it and got sick for many weeks, but stayed with it till she eventually started feeling better and better. She learned that the grass / greens were the most complete foods on the planet, as well as having other healing properties. The wheat seed was chosen because of its sweeter, more palatable taste. (Her cat picked it out.) She also learned that the green / chlorophyll will increase the hemoglobin in the blood which then distributes oxygen to every cell in our body. Take another deep breath! Remember that oxygen is a good thing? Ann started this because of watching the animals do it, as well as a statement that was made to her as a child, “Instinct guided creatures, left to themselves, do not make mistakes.” (I LOVE that one.)
Most of us chewed on grass as children, if it was around. Why then and not now? We lost sight of our instinct. Here’s a FYI on oxygen content on the planet these days: 100 years ago, there was over 30% and now it is at an average of 15%. The most out there, if you live in a lush, green area, is 21%. However, in downtown major cities it is down to 9% or less. Does anyone remember ‘smog alerts’? I do, but not since 1990, when they stopped telling people. Fact: Oxygen in the cells means less chance for cancer to survive. GREENS = Chlorophyll = increased hemoglobin = more OXYGEN in your cells. GET IT NOW? Don’t forget, fresh wheatgrass juice is the best way to FEEL a difference. Drinking 2 ounces / day on an empty stomach is optimum.
In closing, remember these two simple words: “Stay Present" and one of my personal favorite sayings, "Don't let food define your happiness". Take some deep breaths, many times each day as I get to do here in the greenhouse, breathing in approx. 30% oxygen everyday! I can't sleep at night, so send me emails to give me something to do!!
